I like these in a pita pocket with a creamy Italian dressing, lettuce, tomatoes and olives - YUM!

  • 1/4 cup buttermilk
  • 1/4 cup egg substitute
  • 1/2 cup Panko (Japanese bread crumbs)
  • 1/2 cup seasoned Italian bread crumbs
  • 1/4 cup grated Parmesan
  • 1 1/2 teaspoons Italian seasoning
  • 1/4 teaspoon garlic salt
  • 3 medium Zucchini, cut into 1/4-inch slices
  • 3/4 cup Creamy Italian Dressing

Directions
  1. In a shallow bowl, combine the buttermilk and egg substitute.
  2. In another shallow bowl, combine both kinds of bread crumbs, with the cheese, Italian seasoning and garlic salt.
  3. Dip the zucchini into the buttermilk mixture, then the bread crumb mixture.
  4. Place zucchini on baking sheets you've sprayed to be non-stick.
  5. Bake at 400-degrees F., for 20 to 25 minutes, or until they are golden brown, turning over at the half-way point.
  6. You will have "fried" zucchini without the fat, and they will be crispy and crunchy, thanks to the Panko.
