Zucchini Bites

- 1/4 cup buttermilk shopping list
- 1/4 cup egg substitute shopping list
- 1/2 cup panko (Japanese bread crumbs) shopping list
- 1/2 cup seasoned Italian bread crumbs shopping list
- 1/4 cup grated Parmesan shopping list
- 1 1/2 teaspoons italian seasoning shopping list
- 1/4 teaspoon garlic salt shopping list
- 3 medium zucchini, cut into 1/4-inch slices shopping list
- 3/4 cup Creamy Italian dressing shopping list
How to make it
- In a shallow bowl, combine the buttermilk and egg substitute.
- In another shallow bowl, combine both kinds of bread crumbs, with the cheese, Italian seasoning and garlic salt.
- Dip the zucchini into the buttermilk mixture, then the bread crumb mixture.
- Place zucchini on baking sheets you've sprayed to be non-stick.
- Bake at 400-degrees F., for 20 to 25 minutes, or until they are golden brown, turning over at the half-way point.
- You will have "fried" zucchini without the fat, and they will be crispy and crunchy, thanks to the Panko.
