How to make it

  • In a shallow bowl, combine the buttermilk and egg substitute.
  • In another shallow bowl, combine both kinds of bread crumbs, with the cheese, Italian seasoning and garlic salt.
  • Dip the zucchini into the buttermilk mixture, then the bread crumb mixture.
  • Place zucchini on baking sheets you've sprayed to be non-stick.
  • Bake at 400-degrees F., for 20 to 25 minutes, or until they are golden brown, turning over at the half-way point.
  • You will have "fried" zucchini without the fat, and they will be crispy and crunchy, thanks to the Panko.
