Natchitoches Meat Pies

- 1/2 pound ground beef shopping list
- 1/2 pound ground pork shopping list
- 1/4 cup vegetable oil (Start with 2Tbls and work from there) shopping list
- 1/2 cup diced onions shopping list
- 1/2 cup diced celery shopping list
- 1/4 cup diced green bell pepper shopping list
- 1 Tablespoon minced garlic shopping list
- 2 cups beef stock shopping list
- 2 ( 9 inch ) pie shells shopping list
- 1 egg shopping list
- 1/2 cup water shopping list
- salt and pepper shopping list
How to make it
- Preheat oven to 400
- Heat oil in large heavy skillet over medium high heat
- Saute beef and pork until brown
- Stir until all juices have evaporated
- Add onions, celery, green pepper and garlic
- Saute until veges are wilted, about 3 - 5 minutes
- Reduce heat to low, cover and cook 60 minutes
- Add beef stock occasionally to prevent sticking
- Season with salt & pepper
- Remove from heat & cool to room temperature
- Cut pie crusts in half
- Spoon 1/4 meat mixture into each of the 4 pie crust halves
- Mix egg with 1/2 cup water
- Brush egg wash around edge of pie crusts
- Fold pie crusts over and press edges with fork to seal.
- Place on greased cookie sheet
- Make 3 small slits in each pie to vent steam
- Brush remaining egg wash over each pie and bake 30 minutes.
- These meat pies may also be deep fried ( YUM!)
