Natchitoches Meat Pies Recipe
Delicious Meat Pie

Ingredients
  • 1/2 pound ground beef
  • 1/2 pound ground pork
  • 1/2 cup vegetable oil
  • 1/2 cup diced onions
  • 1/2 cup diced celery
  • 1/4 cup diced green bell pepper
  • 1 Tablespoon minced garlic
  • 2 cups beef stock
  • 2 ( 9 inch ) pie shells
  • 1 egg
  • 1/2 cup water
  • salt and pepper

Directions
  1. Preheat oven to 400
  2. Heat oil in large heavy skillet over medium high heat
  3. Saute beef and pork until brown
  4. Stir until all juices have evaporated
  5. Add onions, celery, green pepper and garlic
  6. Saute until veges are wilted, about 3 - 5 minutes
  7. Reduce heat to low, cover and cook 60 minutes
  8. Add beef stock occasionally to prevent sticking
  9. Season with salt & pepper
  10. Remove from heat & cool to room temperature
  11. Cut pie crusts in half
  12. Spoon 1/4 meat mixture into each of the 4 pie crust halves
  13. Mix egg with 1/2 cup water
  14. Brush egg wash around edge of pie crusts
  15. Fold pie crusts over and press edges with fork to seal.
  16. Place on greased cookie sheet
  17. Make 3 small slits in each pie to vent steam
  18. Brush remaining egg wash over each pie and bake 30 minutes.
  19. These meat pies may also be deep fried ( YUM!)
