How to make it

  • Place walnuts in dry nonstick sauté pan over medium heat, stirring occasionally, until toasted brown (about 6 minutes).
  • Preheat oven to 400 degrees. Arrange bread slices on baking sheet. Brush slices with walnut oil. Bake about 5 minutes or until crisp.
  • Mix toasted walnuts, blue cheese, shallots and cranberries. Spread mixture on toast slices. Bake just until cheese melts, about 4 minutes. Serve warm from the oven. Good with a nice Zinfandel--Sapphire Hill is an excellent match.

    My grocery bill is going to be through the ceiling this week ... lol. So many savoury things with cheese. This sounds delicious. The walnut oil must make this taste incredibly earthy. I'd love to try this with some nice roasted portobellos.

    I love blue cheese too! The trifecta of tastes - the sharpness of the cheese, contrasted with the sweetness of the cranberries, and the sweet-sharp Zinfandel holding the two together - make these irresistable to me.

    yeah, i did the same - always looking for new crostini and blue cheese recipes - i can smell,feel, taste this already - and i have LOTS of walnuts from trees in my area just waiting to be used! got vacuumized cranberries in the larder, blue cheese in the fridge - and i'll get the baguette tomorrow morning. what a great evening this is going to be! yippeeeh!
