Easy version of homemade charo beans using organic black and pinto beans with fresh additions. Great to go with enchiladas or any BBQ!

Ingredients
  • 1 Tbs olive oil
  • 4 cloves chopped garlic
  • 1/8 lb chorizo sausage or bacon or combo
  • 1-2 peppers, chopped
  • 1 medium onion, chopped
  • 1 15 oz can pinto beans, rinsed and drained
  • 1 15 oz can black beans, rinsed and drained
  • 2 14 oz cans organic beef or chicken broth
  • 2 Fresh limes, juiced
  • Cilantro for garnish

Directions
  1. In a heavy dutch oven, heat the oil over medium heat.
  2. Saute the onion, garlic, pepper, and chorizo until cooked and soft, about 5 mins.
  3. Add the two beans and broth.
  4. Bring to a boil on low for 30-45 mins until beans and broth get a little thick.
  5. Add the lime juice and salt and pepper to taste.
  6. Garnish with Cilantro.
  7. Optional: Top with Grated cheddar cheese

Note: You can make the flavor more intense by adding some bee bullion to the stock. Of course this is true of any soup or stew.
