Mexican Charo Beans

- 1 Tbs olive oil shopping list
- 4 cloves chopped garlic shopping list
- 1/8 lb chorizo sausage or bacon or combo shopping list
- 1-2 peppers, chopped shopping list
- 1 medium onion, chopped shopping list
- 1 15 oz can pinto beans, rinsed and drained shopping list
- 1 15 oz can black beans, rinsed and drained shopping list
- 2 14 oz cans organic beef or chicken broth shopping list
- 2 Fresh limes, juiced shopping list
- cilantro for garnish shopping list
How to make it
- In a heavy dutch oven, heat the oil over medium heat.
- Saute the onion, garlic, pepper, and chorizo until cooked and soft, about 5 mins.
- Add the two beans and broth.
- Bring to a boil on low for 30-45 mins until beans and broth get a little thick.
- Add the lime juice and salt and pepper to taste.
- Garnish with Cilantro.
- Optional: Top with Grated cheddar cheese
