Quick Pickled Asparagus

- Bundle of thin fresh asparagus shopping list
- water to cover shopping list
- 1 Tbls. salt shopping list
- Gallon ziplock bag shopping list
- 1/2 C. vinegar shopping list
- 1/2 C. water shopping list
- 1 clove garlic, thinly sliced shopping list
- 3/4 t. allspice shopping list
- 6 peppercorns shopping list
- 3/4 t. coriander shopping list
- 1 nutmeg cut in large chunks shopping list
- 1/2 t. hot pepper flakes shopping list
- 1 t. salt shopping list
- 3/4 t. sugar shopping list
How to make it
- Place enough water to cover asparagus in a non-reactive pan.
- Add salt and bring to boil
- Add asparagus and cook 1 minute ONLY
- Remove to ice bath and place well drained spears in ziplock
- In same pan, bring remainder of ingredients to a rolling boil
- Let stand to cool
- Add cooled pickling spices to the asparagus in the ziplock
- Refrigerate and begin enjoying brite green pickled asparagus after 4 hrs. (very little difference in taste after 4 hrs. Keeps for up to 2 weeks but goes a little gray after 3 days.

This is WONDERFUL, made it last year and even the DGKs liked it. We grow asparagus, so always looking for new adventures. "3 minutes to prepare" is overly optimistic, I believe, but it goes pretty fast.
