PEPPER STEAK This recipe came from an estate sale. I obtained it when I purchased the family collection from the Smith Estate in Mesquite, Texas in 1989.

Ingredients
  • 1 pound sirloin steak
  • Nonstick cooking spray
  • 1 green bell pepper sliced
  • 1 red bell pepper sliced
  • 1 medium onion sliced
  • 2 tablespoons soy sauce
  • 1/2 cup cooking wine
  • 1 teaspoon minced garlic
  • 1 can beef broth
  • 2 tablespoons cornstarch
  • 1/4 cup water

Directions
  1. Slice steak into thin strips across grain.
  2. Spray large skillet with cooking spray and place over medium high heat.
  3. Sauté peppers and onion slices stirring often for 4 minutes.
  4. Remove from skillet and set aside.
  5. Quickly brown steak strips in hot skillet stirring and turning as they cook.
  6. Lower heat and add soy sauce, cooking wine and garlic to skillet.
  7. Simmer 10 minutes then add beef broth and return vegetables to skillet.
  8. Simmer 5 minutes.
  9. Mix cornstarch and water together then add to skillet stirring to thicken.
