Rise N Shine Breakfast Casserole

- 10 eggs shopping list
- milk (3 cups) shopping list
- Shredded cheese (1 cup, or more if that suits you) shopping list
- bulk sausage (1 lb) (remove from casings if using regular sausage) shopping list
- mushrooms, several sliced shopping list
- 2 tsp rosemary (can substitute basil, oregano, thyme - but if you have anyone who doesn't really like eggs, rosemary should be the way to go) shopping list
- 1 tsp veggie seasoning shopping list
- Enough day-old bread (white, whole wheat, whole grain) to completely cover the bottom of casserole dish shopping list
How to make it
- Brown sausage meat, adding mushrooms just as meat browns up (no more pink) and cook until mushrooms softened
- Meanwhile whisk eggs in large bowl, add milk and whisk some more
- Grease casserole dish, and lay out day-old bread to cover bottom of your casserole dish, cutting pieces until covered entirely, throwing a couple of slices on top for good luck
- Spread sausage meat/mushroom mixture over bread
- Spread cheese over meat/mushroom mixture
- Spread Rosemary (or oregano/basil/thyme substitute) and seasoning over everything
- Add milk/cheese mixture
- Cover and keep in fridge overnight
- In morning, take out of fridge, to take off chill while pre-heating oven to 350 degrees
- Bake for about 45-60 minutes, until egg is set in center
