Coconut meringue mountain tart

- Crust: shopping list
- 2 cups chocolate cookies crumbs shopping list
- 113g/1/4 pound (1 Stick) of melted butter shopping list
- 1/3 unsweetened crispy rice shopping list
- Filling: shopping list
- ½ can (14 oz) sweetened condensed milk shopping list
- 1 ½ cup unsweetened coconut shopping list
- 1 tsp vanilla extract shopping list
- Meringue topping: shopping list
- 4 egg whites shopping list
- ¼ tsp cream of tartar shopping list
- 1 cup castor sugar shopping list
- 1 tsp vanilla extract shopping list
How to make it
- Preheat oven to 375 F. Grease a 23cm loose bottom tart pan and set aside. Mix the cookies crumbs and butter, add the crispy rice and incorporate. Press in the bottom of the tart pan and bake for 10 minutes. Set aside…
- In a large bowl, mix the condensed milk and vanilla, add the coconut and mix well. The batter will be stiff, so try smooth it with a tablespoon over the baked crust and bake for 12-15 minutes until lightly brown. Cool completely.
- In a clean stainless bowl and using clean beaters, beat the egg whites until frothy and add the cream of tartar. Beat until soft peaks form. Start adding the sugar by tablespoon full gradually until you rich a glossy shining stiff peaks. Add the vanilla and beat again
- for 1 minute.
- Fill a piping bag fitted with a rounded tip with the meringue mixture. Beginning from the outer edge of the tart pan, pipe the meringue in a spin form till the center making a double piping in the center to form a mountain shape. Use a skewer to make small 8 lines in the topping if you wish and brown the meringue topping using a blowtorch for a decorative look. Enjoy!!
