Southwestern Beef Tips And Noodles Recipe
This is a great little recipe that I have been making for aobut ofur years now. The original recipe (which I adapted to out family) was from the Southern Living Magazine.

Ingredients
  • 1/4-cup all-purpose flour
  • 2-lb boneless top sirloin roast, cut into 1/2-inch cubes
  • 1/4 cup olive oil
  • 1 (14 1/2-oz) can Rotel tomatoes (Originial)
  • medium onion, julienned
  • bell pepper, julienned
  • 2 pod of garlic, pressed in garlic press or finely chopped
  • 1-tspn cumin
  • 1/4-tspn coarse salt
  • 1/4-tspn pepper
  • I jar Ragu (I like the Chunky Vegetable Style)
  • hot cooked egg noodles

Directions
  1. Place flour in a heavy-duty, ziplock plastic bag.
  2. Add beef cubes, seal bag and shake until meat is coated wtih flour.
  3. Brown beef in hot oil in a Dutch oven, stirring often.
  4. Add tomatoes, onion, bell pepper, garlic, cumin, salt and pepper; bring to a boil.
  5. Cover and reduce heat and simmer for 30 minutes.
  6. Uncover and simmer 30 minute more or until beef tips are tender, stirring occasionally.
  7. Serve over egg noodles.
