Penne Pasta with Artichoke and Peas

- penne pasta (8-oz) shopping list
- 1-tbspn margarine shopping list
- extra virgin olive oil - 3-tbspn shopping list
- 1 small onion, chopped shopping list
- frozen peas - 1 cup shopping list
- 1 (14.oz) can artichoke hearts in brine, drained and chopped shopping list
- 2-tbspn water shopping list
- 1/4-tspn freshly ground pepper shopping list
- 1/4-tspn salt shopping list
- 1/4 cup parmesan cheese shopping list
- 1/2-cup fresh parsley, chopped shopping list
How to make it
- Cook penne according to package directions.
- While penne is cooking,heat margarine and 1-tbspn of the oil over mediumheat.
- When margarine is melted and oil is hot, add onion; saute 2 or 3 minutes
- Add peas and artichoke hearts; cook about 5 more minutes.
- Add water and bring to a boil over high heat, scraping up browned bits from bottom of skillet.
- Remove from heat and keep warm.
- Drain penne thoroughly and place in serving bowl.
- Add vegetable mixture and juices from skillet; toss gently to mix.
- Add remaining 2-tbspn of olive oil, salt and pepper, toss to coat.
- Add parsley and cheese, toss.
