How to make it

  • Cook penne according to package directions.
  • While penne is cooking,heat margarine and 1-tbspn of the oil over mediumheat.
  • When margarine is melted and oil is hot, add onion; saute 2 or 3 minutes
  • Add peas and artichoke hearts; cook about 5 more minutes.
  • Add water and bring to a boil over high heat, scraping up browned bits from bottom of skillet.
  • Remove from heat and keep warm.
  • Drain penne thoroughly and place in serving bowl.
  • Add vegetable mixture and juices from skillet; toss gently to mix.
  • Add remaining 2-tbspn of olive oil, salt and pepper, toss to coat.
  • Add parsley and cheese, toss.
