Penne Pasta With Artichoke And Peas Recipe
I make this alot during Lent, but that isn't the only time of the year that we have it. It makes a nice light dinner in the summer time with just some garlic bread and a nice glass of wine (or sparkling water for the boys) on the side.

Ingredients
  • penne pasta (8-oz)
  • 1-tbspn margarine
  • extra virgin olive oil - 3-tbspn
  • 1 small onion, chopped
  • frozen peas - 1 cup
  • 1 (14.oz) can artichoke hearts in brine, drained and chopped
  • 2-tbspn water
  • 1/4-tspn freshly ground pepper
  • 1/4-tspn salt
  • 1/4 cup Parmesan cheese
  • 1/2-cup fresh parsley, chopped

Directions
  1. Cook penne according to package directions.
  2. While penne is cooking,heat margarine and 1-tbspn of the oil over mediumheat.
  3. When margarine is melted and oil is hot, add onion; saute 2 or 3 minutes
  4. Add peas and artichoke hearts; cook about 5 more minutes.
  5. Add water and bring to a boil over high heat, scraping up browned bits from bottom of skillet.
  6. Remove from heat and keep warm.
  7. Drain penne thoroughly and place in serving bowl.
  8. Add vegetable mixture and juices from skillet; toss gently to mix.
  9. Add remaining 2-tbspn of olive oil, salt and pepper, toss to coat.
  10. Add parsley and cheese, toss.
