How to make it

  • For each serving fry 1 slice of country ham to a nice crispy, golden brown. This usually takes about 10 minutes per side. Leave the skillet covered until you turn the ham slices, then leave it uncovered. Removed the slices to a platter. You should have a lot of ham drippings left in the pan. For each serving, pour in about 1 teaspoon of coffee. Let this simmer for a couple of minutes. For full "red-eye" effect, remove this gravy to a round white bowl. Serve the gravy over grits, eggs, biscuits, and of course, the ham!

    Are you a southern belle? You sure cook and eat like one. Sorry I have to ask - shoulda read your page, but .... I didn't *grin* Never had red eye gravy before. Have to try this. Great post - thanks for sharing.
