Lemon Grass Prawn Toast Recipe

Ingredients

1 lb of peeled, raw prawns

4 springs of onions, chopped

1 stalk of lemon grass, cleaned and crushed

1 egg

1 tbsp vegetable oil

1 tbsp of fresh chopped cilantros

1 tbsp fish sauce

2 tsp of sweet thai chilli sauce

1 tsp of lemon juice

1 tbsp cornstarch

8 slices of stale bread, cut into quarters and then diagonally into triangles

oil for shallow frying

Directions

Add prawns, onions, lemongrass, egg, oil, cilantros, fish and chilli sauces, lemon juice and cornstarch to a food processor and process until paste is smooth.

Spread prawn toast on each triangle.

Heat 2 cm of oil in a pan. When oil is hot, boils when you place a wooden chopstick in, add prawn toast face down in oil.

Cook for 2 minutes and turn once. Cook until golden and drain on paper towel.
