So Easter is over and we boiled over 24 eggs - now what to do with them all?! This combo turned out SO good they were all gone in a matter of minutes! I love seeing everyone's reaction taking that first bite! MMMMMMMmmmmmmmmmmmm!!

Ingredients
  • A dozen hard boiled large eggs
  • 1/4 cup red onion, minced real fine
  • 1/4 cup cucumber, finely chopped
  • 1/2 cup mayo
  • 1/4 cup dijon mustard
  • dash salt
  • dash pepper
  • papricka
  • green onion chopped for garnish

Directions
  1. Slice eggs lengthwise and remove yolks.
  2. In a large bowl mix yolks, onion, cucumber, mayo, mustard, salt and pepper.
  3. Spoon filling into egg white halves.
  4. Sprinkle tops with papricka.
  5. Garnish with green onion.
  6. Yum!
