creamy lemon pasta

- 2 tbs. lemon juice shopping list
- zest from 1 lemon shopping list
- 8 0z. pasta; fettuccine or angel hair are good choices shopping list
- 1/2 cup half and half (I use fat-free) shopping list
- 2 tbs. butter (margarine if you must) shopping list
- 3 tbs. softened cream cheese (again, I use fat-free) shopping list
- 2 tbs. (fresh preffered) grated parmesan shopping list
How to make it
- start your pasta to boil in salted water
- melt butter in a seperate sauce pan on medium heat
- add lemon juice and zest
- in a small mixing bowl, combine cream cheese and half and half, mix on low until smooth
- add cream cheese mixture to sauce pan and heat until warmed through, about 2 minutes
- drain pasta when cooked (according to package directions)
- pour sauce over pasta and toss
- grate parmesan over top and serve!

I made this for lunch today and it is really good. Although, I did not have any lemons (which is unusual for me) or half and half, I just doubled up on the lemon juice, the cream cheese and added some nonfat milk.
