Creamy Lemon Pasta Recipe

Ingredients

2 tbs. lemon juice

zest from 1 lemon

8 0z. pasta; fettuccine or angel hair are good choices

1/2 cup half and half (I use fat-free)

2 tbs. butter (margarine if you must)

3 tbs. softened cream cheese (again, I use fat-free)

2 tbs. (fresh preffered) grated parmesan

Directions

start your pasta to boil in salted water

melt butter in a seperate sauce pan on medium heat

add lemon juice and zest

in a small mixing bowl, combine cream cheese and half and half, mix on low until smooth

add cream cheese mixture to sauce pan and heat until warmed through, about 2 minutes

drain pasta when cooked (according to package directions)

pour sauce over pasta and toss

grate parmesan over top and serve!
