How to make it

  • Place egg yolk, mustard, anchovies, garlic, vinegar, lemon juice, and Worcestershire sauce into a bowl.
  • Mix with whisk
  • Slowly add olive oil until fully incorporated
  • If dressing gets too thick, add warm water and then continue until all oil is added
  • Add parmesan and continue to mix
  • Makes 1 1/2 cups

    Uuumm this is not a true Caesar dressing .
    Coddled egg yolks , Worcestershire , lemon juice , grated Parmesan , extra virgin olive oil salt and pepper , and that is all . The garlic flavor comes from the cruton. No anchovies no mustard . It originated from (believe it or not ) Tijauana (back when that was a sheik place) google it or something . It's as good if not better

    This is one of the best recipes for Caesar dressing. Mine made a whole quart. I used the blender, I did add a little warm water as suggested...I omitted the raw egg only because I'm squimish about it...It's just how I like it...nice and garlicky....Yum...I also saved this to my FAV'S folder. I hate buying it in the supermarket it's always nasty and I hate creamy Caesar.

    How is it that the recipe uses 2C olive oil, 8T wet ingredients & 1C Parm. cheese, yet only ends up making 1 1/2 Cups total?

    I made an account just so I could say how wonderful this dressing is. It tastes like the best I have ever had at a restaurant. It is the only dressing I have ever made at home that I like as much as a fancy dinner out. Wow! Thanks.

    Great Recipe! But one question. If you have 2cups of olive oil and 1cup of parmesan. How do you only end up with 1 1/2 cups of dressing?

    Tried this dressing and found it to be absolutely delicious...Will very likely be my dressing whenever I have a Caesar salad...Like the fact that thee is no mayo used as well...I gave it a five!!
