Peanut Stew Maffe

- 1/3 cup tomato paste shopping list
- 3/4 cup chunky unsalted peanut butter shopping list
- 1 cup unsalted chicken broth shopping list
- 3 tablespoons peanut oil shopping list
- 2 to 3 chicken legs and thighs separated. Can be skinless, if desired. shopping list
- 1 bone in chicken breast, cut in half shopping list
- 1 large yellow onion, chopped shopping list
- cayenne pepper ( to taste ) I used one teaspoon shopping list
- black pepper ( to taste ) I used one teaspoon shopping list
- Dried thyme( to taste) I used 1/2 teaspoon shopping list
- 2 bay leaves shopping list
- Serve with rice or couscous shopping list
How to make it
- Combine tomato paste and peanut butter in a bowl
- Gradually add chicken broth until mixture is smooth and well blended
- Set Aside
- Heat oil over medium high heat, saute chicken until browned on all sides
- Transfer chicken to separate bowl
- Add onion to skillet, cook until soft, about 5 minutes
- Pour peanut butter mixture into skillet with onions
- Add cayenne pepper, black pepper and thyme. Add Bay leaves.
- Return chicken to skillet, bring mixture to boil, immediately turn heat to simmer
- Cover and simmer until chicken is done, about 30 minutes
