Ingredients

How to make it

  • Combine tomato paste and peanut butter in a bowl
  • Gradually add chicken broth until mixture is smooth and well blended
  • Set Aside
  • Heat oil over medium high heat, saute chicken until browned on all sides
  • Transfer chicken to separate bowl
  • Add onion to skillet, cook until soft, about 5 minutes
  • Pour peanut butter mixture into skillet with onions
  • Add cayenne pepper, black pepper and thyme. Add Bay leaves.
  • Return chicken to skillet, bring mixture to boil, immediately turn heat to simmer
  • Cover and simmer until chicken is done, about 30 minutes

    My sister made something like this once that she called African Chicken Peanut Stew and it blew my mind. She misplaced the recipe and I have been searching for it ever since. I cant wait to try this!!!!!!!!!!!
