Sautéed onion and herb couscous. One of my all time favourite recipes, and the one i am always being asked to make and give the recipe for.

Ingredients
  • 2 tablespoons butter or margarine
  • 3 gloves garlic, chopped
  • 2 onions, finely chopped
  • salt and pepper to taste
  • 1 teaspoon thyme
  • 1 teaspoon oregano
  • 1 cup of couscous
  • 1 cup of chicken stock
  • 1 tablespoon of olive oil (optional)

Directions
  1. In pan, melt butter over medium heat. Fry garlic and onions, stirring occasionally. Season with salt, pepper, thyme and oregano. Fry until softened, about 4/5 minutes.
  2. In a pot bring chicken stock to boil. When boiling stir in couscous (and if desired olive oil). Cover and remove from heat immediately. Let stand 5 minutes.
  3. Add the onions and garlic to the couscous, stir to combine. Fluff with folk.
  4. Serve immediately.
