75 Year Old Butterscotch Pie Recipe
Most butterscotch pie recipes call for the browning of the sugar. In this recipe, the sugar, butter, and cream are mixed then browned. An easy, old recipe.

Ingredients
  • 2 cups sugar
  • 12 tablespoons unsalted butter
  • 12 tablespoons cream
  • 2 cups milk
  • 12 tablespoons flour
  • 4 egg yolks
  • 1 tablespoon vanilla flavoring
  • MERINGUE
  • 4 egg whites
  • Pinch cream of tartar
  • 8 tablespoons sugar

Directions
  1. In a pan, mix sugar, butter and cream together
  2. Cook until really brown
  3. Mix milk, eggs and flour together
  4. Pour into first mixture and cook until thick
  5. Add vanilla flavoring
  6. Pour into a *baked* pie crust
  7. May top with meringue OR
  8. May top with lightly sweetened whipped cream
  9. MERINGUE
  10. In large bowl, add 4 egg whites, pinch of cream of tartar
  11. Beat with an electric mixer until foamy
  12. While beating on high, add sugar, 1 tablespoon at a time
  13. Beat until satiny and standing in high stiff peaks
  14. Mound on filling
  15. Bake at 350 degrees until lightly browned
