Back to my steamer . It's raining in the afternoons and it's nice to have dis steamy cupcakes with green tea .

Ingredients
  • 3 Banans , Sliced
  • 150 g plus 100 g Caster Sugar
  • 100 ml Water
  • 75 g Butter , melted
  • 100 ml Low Fat Evaporated Milk
  • 2 eggs , lightly beaten
  • 180 g Flour , 1/2 tsp Baking Soda , Pinch of Salt - sifted

Directions
  1. Caramalise the 150 g sugar until golden brown . Remove from fire and add the water .
  2. Boil again until the sugar is melted . Cool it .
  3. Take 300 ml of the caramel , add the butter , milk and eggs .
  4. In a bowl , add the flour , 100 g sugar and stir .
  5. Pour the caramel mixture . Stir until lump free .
  6. Grease the cups . Place some banana slices at the bottom of each cup .
  7. Pour batter into all the cups .
  8. Boil a steamer . Steam the cups for 20 mins .
  9. Turn it over and serve warm .

I have always wanted to try steamed cupcakes... but I don't have any ramekins! I guess I'll just have to bite the bullet and buy some, eh?

One question: does the steamer have to be boiling by the time the cups go in (like preheating the oven)? My guess is it does, but I just wanted to double check!
