low fat but oh so yummy potato soup

- 4 yukon gold potatoes peeled and chopped into bite size chunks shopping list
- 4 slices Canadian bacon chopped shopping list
- 1/2 large white onion chopped shopping list
- 1 tbs. butter shopping list
- 4 medium cremini mushrooms (optional) shopping list
- 3 cups fat free chicken broth shopping list
- 1 cup fat free half and half shopping list
- 1 tsp garlic salt shopping list
- 1/2 tsp pepper shopping list
How to make it
- melt butter in medium sauce pan on medium-high
- add garlic salt
- sautee onions until softened
- add mushrooms (optional) and canadian bacon
- sautee about 2 minutes
- add chicken broth, potatoes and pepper
- turn heat up to high and bring to a boil
- cover and reduce heat to low
- simmer until potatoes are very tender, about 15 minutes
- add half and half
- turn heat up to medium and warm through, about 2 minutes

My daughter loves potato soup and I didn't have a good recipe. This one sounds easy. I will be leaving out the mushrooms though. =)
