How to make it

  • For the dressing, whisk toegther the last 3 ingredients and season to taste with salt and black pepper, then set aside.
  • Cook the green beans for about 2 minutes (blanching) or until slightly tender, then drain.
  • In a large bowl, toss together salad leaves, cucumber, tomatoes, green beans, anchovies, olives and dressing.
  • Top off with the quartered egg(s) and flaked tuna (so it doesn't lose its shape)
  • Serve immediately - enjoy. :)
