Classic Salad Nicoise

- 115g green beans (trimmed & halved) shopping list
- 115g mixed salad leaves shopping list
- 1/2 small cucumber (thinly sliced) shopping list
- 4 ripe tomatoes (quartered) shopping list
- 50g canned anchovies (drained) - optional shopping list
- 4 eggs (hard-boiled & quartered OR poached) shopping list
- 1 small can of tuna in brine shopping list
- salt & ground black pepper shopping list
- 50g small black olives - optional shopping list
- Dressing: shopping list
- 6 Tbsp extra virgin olive oil shopping list
- 2 garlic cloves (crushed) shopping list
- 1 Tbsp white wine vinegar shopping list
How to make it
- For the dressing, whisk toegther the last 3 ingredients and season to taste with salt and black pepper, then set aside.
- Cook the green beans for about 2 minutes (blanching) or until slightly tender, then drain.
- In a large bowl, toss together salad leaves, cucumber, tomatoes, green beans, anchovies, olives and dressing.
- Top off with the quartered egg(s) and flaked tuna (so it doesn't lose its shape)
- Serve immediately - enjoy. :)
