Scrambled Mexican Tofu

- 6 Tablespoons ( 90 ml) soy sauce shopping list
- 1/2 Teaspoon (2.5 ml) black pepper shopping list
- 1 Cup ( 250 ml) diced onions shopping list
- 1 Diced pepper - Red or Yellow is best shopping list
- 4 Tablespoons ( 60 ml) green chili shopping list
- 12 Tablespoons ( 180 ml) Fresh chives shopping list
- 1 lb ( 500 g) soft tofu shopping list
- 2 fresh tomatoes - Diced shopping list
- 5 garlic cloves - Minced shopping list
How to make it
- Mix soy sauce and black pepper in a bowl,
- crumble in the tofu.
- Saute onions and chopped pepper over gentle heat in a greased skillet until the onion softens (about 5 minutes).
- Add garlic and tomatoes and cook over medium heat until cooked (about 15 minutes).
- Serve Immediately.

Wow, this recipe looks great. Most of my family and I are meat and potatoes people except for my oldest daughter who is a vegetarian. I do prepare tofu and vegetarian meals and this looks delicious. You've got my "5" fork rating :)
