Oatmeal Cake

This is a moist, rich cake that will keep well. I think you will enjoy this..
Ingredients
- 1-1/4 cups boiling water shopping list
- 1/2 cup butter or margarine shopping list
- 1 cup oatmeal (quick cooking) shopping list
- 1 cup white sugar shopping list
- 1 cup brown sugar shopping list
- 2 eggs shopping list
- 1/2 teaspoon nutmeg shopping list
- 1 teaspoon baking powder shopping list
- 1 teaspoon baking soda shopping list
- 1/2 teaspoon salt shopping list
- 1 teaspoon cinnamon shopping list
- 1-1/3 cups flour shopping list
- Topping: shopping list
- 6 Tablespoons soft butter or margarine shopping list
- 1 cup nuts shopping list
- 1/2 teaspoon vanilla shopping list
- 1/2 cup sugar shopping list
- 1/4 cup milk shopping list
- 1 cup coconut shopping list
How to make it
- Pour boiling water over oatmeal and butter. Let mixture stand for 20 minutes.
- Add sugars and eggs; mix well. Add sifted dry ingredients and blend well.
- Pour into greased and floured 9 x 13 x 2-inch pan.
- Bake at 350 degrees for 35 minutes.
- Blend all topping ingredients together.
- Spread on top of cake as it comes out of the oven.
- Place cake back in oven and broil just until coconut browns. Do not overcook the topping.
