How to make it

  • Clean strawberries and rinse carfully by swishing them in a pan of cold water emptying the water and repeating the process until there is no more sand or debris of any kind in the water.
  • Drain and place berries into a large bowl and fill bowl about half way full of fresh berries and cover with white sugar. The amount of sugar is going to vary depending on the sweetness of the strawberries so this becomes a judgement call. Gently mix strawberries being careful not to crush berries but you do need to slice larger berries so that they will absorb the sugar and also to make a juice. Mix until berries have make a nice juicy sort of syrup when mixed with sugar. If berries aren't juicy enough, you can add a very small amount of cold water to help luiquify the sugar. Let sit in the refigerator for several hours or overnight so the berries absorb the sugar and the juice becomes more like a light syrup. (If you eat them too soon the sugar will still be gritty...not a good thing)
  • Cover shortcake with berries & juice then add a scoop of vanilla ice cream if you want extra goodness :) and top with some more juicy berries. Now it's time to top it off with a gererous amount of whipped creamsprinkle with nuts of your choice, add a cherry on top and dig in. Your now on your way to strawberry heaven so enjoy the ride!
