This delicious casserole is a snap to put together, and is so versatile. The reason I call it "sexy" is because it is just so 'easy' to make.

Ingredients
  • 1 to 1-1/2 lb skinless, boneless chicken thighs (or any smaller size chicken pieces will do, such as breast)
  • Rice, pkg of one of those quick side dishes with a fairly strong flavor, but pick your favourite - I used Lipton's Mexican Sides
  • 1/2 cup Rice (regular, not minute rice)
  • 1 can creamy condensed soup, such as Cream of Celery (my fave to cook with, or Mushroom)
  • Broccoli, 1 cup fresh (or frozen)
  • Bread crumbs

Directions
  1. Preheat oven to 350 degrees
  2. Cut up broccoli, place in small bowl with a little water, cook just long enough in microwave for about 1 to 2 minutes, or just long enough to start cooking process
  3. Put all rice in casserole dish
  4. Add soup and 3 cups water (as per rice package directions plus 1 cup for additional rice added)
  5. Mix all together, mix in broccoli
  6. Place chicken on top of mixture - it's okay if it sinks a little into your soupy rice mixture
  7. Cover and bake for about half an hour, then check - when most liquid is absorbed by rice, sprinkle breadcrumbs on top of chicken
  8. Uncover and bake for another 15 to 20 minutes, until rice absorbs all liquid
