Sexy Chicken Casserole

- 1 to 1-1/2 lb skinless, boneless chicken thighs (or any smaller size chicken pieces will do, such as breast) shopping list
- rice, pkg of one of those quick side dishes with a fairly strong flavor, but pick your favourite - I used Lipton's Mexican Sides shopping list
- 1/2 cup rice (regular, not Minute rice) shopping list
- 1 can creamy condensed soup, such as Cream of celery (my fave to cook with, or mushroom) shopping list
- broccoli, 1 cup fresh (or frozen) shopping list
- bread crumbs shopping list
How to make it
- Preheat oven to 350 degrees
- Cut up broccoli, place in small bowl with a little water, cook just long enough in microwave for about 1 to 2 minutes, or just long enough to start cooking process
- Put all rice in casserole dish
- Add soup and 3 cups water (as per rice package directions plus 1 cup for additional rice added)
- Mix all together, mix in broccoli
- Place chicken on top of mixture - it's okay if it sinks a little into your soupy rice mixture
- Cover and bake for about half an hour, then check - when most liquid is absorbed by rice, sprinkle breadcrumbs on top of chicken
- Uncover and bake for another 15 to 20 minutes, until rice absorbs all liquid
