Chicken and Veggie Skillet

- 1 whole chicken, washed and cut into pieces shopping list
- 1 medium sized potato shopping list
- 1 medium sized onion shopping list
- 1 tsp salt shopping list
- 1/4 tsp black pepper shopping list
- 1/4 tsp paprika shopping list
- 1/8 tsp garlic powder, optional shopping list
- 1 Tbsp oil shopping list
- 2 Tbsp water shopping list
- 8 ounce can of tomato sauce shopping list
- 1 cup chicken broth shopping list
- 1 tsp sugar shopping list
- 1 pkg frozen mixed vegetables (10-16 ounces as available) shopping list
How to make it
- Mix salt, pepper, paprika and garlic powder if using, and rub over chicken pieces while you are heating the oil in a large skillet.
- Put chicken in skillet and cook skin side down for 10 minutes over medium heat.
- Add water to skillet. Turn and rearrange the chicken, then put cover back on and cook for 30 more minutes, turning and rearranging the chicken every 10 minutes.
- Meanwhile, peel the potato and cut it into strips about 1/2 inch by 1/2 inch and 2 inches long, and chop the onion.
- Remove the chicken from the skillet and set aside.
- Add the potato and the onion to the skillet and cook in the juices left in the pan for about 3 minutes or so until the onion is tender.
- Add the tomato sauce, broth and sugar (not for sweetness,cuts the bitterness of the tomato) and bring the mixture to a boil.
- Put the chicken back in the skillet into the liquid, along with your frozen mixed vegetables.
- Cook until vegetables are tender, 12 minutes or more if you prefer.
- Serve while still hot.
