How to make it

  • Mix salt, pepper, paprika and garlic powder if using, and rub over chicken pieces while you are heating the oil in a large skillet.
  • Put chicken in skillet and cook skin side down for 10 minutes over medium heat.
  • Add water to skillet. Turn and rearrange the chicken, then put cover back on and cook for 30 more minutes, turning and rearranging the chicken every 10 minutes.
  • Meanwhile, peel the potato and cut it into strips about 1/2 inch by 1/2 inch and 2 inches long, and chop the onion.
  • Remove the chicken from the skillet and set aside.
  • Add the potato and the onion to the skillet and cook in the juices left in the pan for about 3 minutes or so until the onion is tender.
  • Add the tomato sauce, broth and sugar (not for sweetness,cuts the bitterness of the tomato) and bring the mixture to a boil.
  • Put the chicken back in the skillet into the liquid, along with your frozen mixed vegetables.
  • Cook until vegetables are tender, 12 minutes or more if you prefer.
  • Serve while still hot.
