Chicken And Veggie Skillet Recipe

Ingredients
  • 1 whole chicken, washed and cut into pieces
  • 1 medium sized potato
  • 1 medium sized onion
  • 1 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp paprika
  • 1/8 tsp garlic powder, optional
  • 1 Tbsp oil
  • 2 Tbsp water
  • 8 ounce can of tomato sauce
  • 1 cup chicken broth
  • 1 tsp sugar
  • 1 pkg frozen mixed vegetables (10-16 ounces as available)

Directions
  1. Mix salt, pepper, paprika and garlic powder if using, and rub over chicken pieces while you are heating the oil in a large skillet.
  2. Put chicken in skillet and cook skin side down for 10 minutes over medium heat.
  3. Add water to skillet. Turn and rearrange the chicken, then put cover back on and cook for 30 more minutes, turning and rearranging the chicken every 10 minutes.
  4. Meanwhile, peel the potato and cut it into strips about 1/2 inch by 1/2 inch and 2 inches long, and chop the onion.
  5. Remove the chicken from the skillet and set aside.
  6. Add the potato and the onion to the skillet and cook in the juices left in the pan for about 3 minutes or so until the onion is tender.
  7. Add the tomato sauce, broth and sugar (not for sweetness,cuts the bitterness of the tomato) and bring the mixture to a boil.
  8. Put the chicken back in the skillet into the liquid, along with your frozen mixed vegetables.
  9. Cook until vegetables are tender, 12 minutes or more if you prefer.
  10. Serve while still hot.
