Ingredients
  • 2 cups prepared green tea
  • 1/3 cups sugar
  • 4 cups water
  • 1/2 cup black or pastel-color raw topioca pearls ( Tapioca pearls are availble in Asian markets and gourmet food stories)
  • 4 cups melon chunks (cantaloupe, honeydew or watermelon)
  • 4 cups ice cubes
  • 2 cups orange juice
  • 1/2 cup coconut milk
  • large straws (optional)

Directions
  1. Combine green tea with sugar; set aside.
  2. In medium saucepan, bring water to boil over high heat; add topioca pearls. Stir lightly and let pearls float to top.
  3. Reduce heat to low and simmer, uncovered, 25 mintues.
  4. Remove from heat and let pearls sit in water 25 minutes until chewy and translucent. Drain and drinse under cold water.
  5. Combine with sweetened tea in medium bowl. Refrigerate until neended.
  6. Blending in 2 batches, combine melon, ice cubes, orange juice and cocount milk in blender of food processor. Process until smooth.
  7. Place about 1/4 cup topioca mixture in bottom of large glass. Fill with melon mixture. Serve with straws, if desire.
