Ingredients
  • 1/4 cup each finely chopped red, yellow and green bell pepper
  • 2 eggs
  • 1/4 cup butter or margarine
  • 2 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 cup milk
  • 1 tablespoon baking powder
  • 3/4 teaspoons salt
  • 1/2 teaspoon dried basil

Directions
  1. Preheat oven to 400.
  2. Prepare pans.
  3. In small skillet over medium high heat cook peppers in butter until color is bright and pepper is tender crisp then set aside.
  4. In large bowl combine flour, sugar, baking powder, salt and basil.
  5. In small bowl combine milk and eggs until blended.
  6. Add dry mix together with peppers and butter to wet mix.
  7. Stir until just moistened then spoon into pans and bake for 15 minutes.
