Vegetable Puree Recipe
Great, easy vegetable puree. I don't call it a cream since there's no dairy products in it. Basically you sautee the veggies, add stock and puree!

Ingredients
  • 4 large potatoes
  • 1 large sweet potato
  • 1 medium yellow onion
  • 4 cloves garlic
  • 4 large carrots
  • 1 green bell pepper
  • 1/2 red bell pepper
  • 1/4 cup parsley, chopped
  • 1 liter vegetable (or chicken) stock
  • salt & pepper
  • 2t paprika
  • 1 bay leaf
  • 4 T. extra virgin olive oil

Directions
  1. Chop or cube (small pieces) the carrots, potato and sweet potato.
  2. Roughly chop the garlic.
  3. Add above to a stock pot that's hot and has about 4T olive oil in it.
  4. After a minute, add the garlic. Let sautee on medium flame for 5 min, stirring often to prevent sticking and/or burning.
  5. Chop onion and peppers. Add to the pot. Sautee 5 min.
  6. Add parsley, paprika, bay leaf, salt & pepper, stir.
  7. Let cook for 10 min.
  8. Add stock, should be enough to just cover the vegetables.
  9. Cover and simmer on low for 15-20 minutes.
  10. Take off heat, and with immersion blender, puree.
