Vegetable Puree

    An interesting concoction. Flavor is good. Sort of like an all in one vegetable dish. Texture and taste is that of baby food. Not sure how to serve it. It lumps out on the plate as a side. If I added more vegetable bouillon to loosen it up, I could serve it as a soup.
    Recipe comes out to spec.
    Now I'm wondering if my potato ratio is off. "Large" is quite subjective. And pureed potatoes do thicken up a soup quite well.
    Used home grown peppers, carrots and sweet potato.
    Waiting for tomorrow to see if there is any change or intensification in character.

    When I think of puree, I think of the consistency being thicker than tomato sauce, but not as thick as tomato paste. I can't imagine the recipe is meant to be served as a side dish, so wonder what you're going to use it for.

    First off I'll probably try a small bowl of it just as it is, trying it cold and hot. Next I would use some veggie broth to loosen it up a bit to a thick soup and try it that way. I haven't thought beyond that point.

    It can be used in baking as a sub for fats or to replace applelsauce. I like the option of using it as or in a pasta sauce.
    Maybe I'll add a tomato or two and add it to some angel hair pasta with Parmesan sprinkled on top.

    Mother took some of it and loaded it up with butter (oleo) and added some artificial sweetener. It now mimics sweet potato for her.

    Oh, my gosh. I'm not certain I could try this because of texture issues. I think using it as a pasta sauce is a good idea though. With some adds to it... like meat. :-P

    I'm agreeing with pasta sauce and maybe thinning it out a little more for more of a sauce or even getting it to a pesto thickness. I like all the veggies though!
