Beet and Feta Dip

- 2 beets, trimmed, peeled and quartered shopping list
- 1 T tabil spice blend (in my recipes) shopping list
- 8 ounces (scant) feta cheese shopping list
- 2-3 T balsamic vinegar shopping list
How to make it
- In a saucepan combine beets, tabil, and just enough water to almost cover the beets.
- Bring to a boil, reduce heat and simmer, stirring occasionally, until beets are tender and water is almost completely evaporated.
- Place cooked beets, feta and vinegar in a blender and blend until smooth.
- Serve with crusty bread or crudites.
