How to make it

  • this dish is best cooked in a heavy bottomed pot, though a large wok has often worked well for me(just one of the random cooking implements i've collected)
  • skin the sausage and form into quarter size meatballs
  • saute the sausage meatballs untill browned on the outside
  • add the chopped onion saute till transluscent
  • add potatoes and enough liquid of your liquid of choice to just barely cover all ingredients simmer for 10-15 minutes until the potatoes are cooked through
  • add the kidney beans, check seasonings and cook for 5 minutes, or until the potatoes start to disintegrate and serve
  • goes well with a dark greens, such as spinach, and a hearty bread is a must with this recipe
