Irish sausage and potato dinner

- 1lb sausage, a savory variety like a garlic sausage or something of German origin works well with this, though it comes out well with a sweet or a spicy Italian. shopping list
- 1 large onion chopped med dice shopping list
- 1lb potatoes peeled, cut large dice and parboiled for 10 minutes shopping list
- 1 1/4 cups chicken stock, beef stock, or a lighter beer(amount may vary on taste, ingredients desired consistency) shopping list
- salt and pepper shopping list
- 1 8oz can of pinto beans drained(though I prefer kidney beans adds a nice touch of color to the dish) shopping list
How to make it
- this dish is best cooked in a heavy bottomed pot, though a large wok has often worked well for me(just one of the random cooking implements i've collected)
- skin the sausage and form into quarter size meatballs
- saute the sausage meatballs untill browned on the outside
- add the chopped onion saute till transluscent
- add potatoes and enough liquid of your liquid of choice to just barely cover all ingredients simmer for 10-15 minutes until the potatoes are cooked through
- add the kidney beans, check seasonings and cook for 5 minutes, or until the potatoes start to disintegrate and serve
- goes well with a dark greens, such as spinach, and a hearty bread is a must with this recipe
