7-year-old Mary (my niece) is a Food Channel fan; she adores Iron Chef. She invented this tasty recipe. Watch her cook at http://www.youtube.com/watch?v=v5hauVn3DqQ We think this would be even better with some kind of sauce; any ideas?

Oatmeal or instant oatmeal makes a great loaf filler and binder too, instead of bread slices. Something like what Quaker sells.

A Tarragon Mustard 'Cream' sauce. Substitute soy milk for the cream. You could prolly use the cream sauce I posted earlier. Use a little flour in with the drippings from the meatloaf to form a roux when you start the sauce if you want it thickened.

You know, this is a fatastic recipe. I bet if you mixed in some ham based sausage or ground ham it might be pretty tasty good as well. Kind of a Chicken Cordon Blue loaf. Maybe even roll the loaf around some swiss, gruyere and emmental cheeses. Or you could do a layer of ground chicken, a layer of ground ham or ham sausage, and a layer of cheeses. Fold into a layered loaf, or roll it. Bake it in a bread loaf pan.

I went to the market today for ground chicken but they were all out... so now I have to haul out my meat grinder.
I also can't find "salad herbs" on the shelf any more... and my bottle is elderly... so I will mix my own from fresh.
