Lemon Chicken Meatloaf

- 2 lb ground chicken shopping list
- 12 pieces whole wheat bread, shredded into crumbs shopping list
- 4 Tbsp olive oil shopping list
- juice of 2 lemons plus grated zest shopping list
- 2 Tbsp 'salad herbs' mix (tarragon, basil, thyme, parsley, marjoram, spearmint) shopping list
- 1 tsp. onion salt shopping list
How to make it
- Combine all ingredients, form into a loaf. Place additional 2 Tbsp olive oil in glass loaf pan, place loaf on top. Cover and bake at 400 degrees, for 30 minutes. Uncover and bake and additional 10 minutes. Yum!

A Tarragon Mustard 'Cream' sauce. Substitute soy milk for the cream. You could prolly use the cream sauce I posted earlier. Use a little flour in with the drippings from the meatloaf to form a roux when you start the sauce if you want it thickened...more

You know, this is a fatastic recipe. I bet if you mixed in some ham based sausage or ground ham it might be pretty tasty good as well. Kind of a Chicken Cordon Blue loaf. Maybe even roll the loaf around some swiss, gruyere and emmental cheeses. O...more
