We make breakfast for friends on occassion, to date, this is one of their favorite breakfast dishes. Definitely has some heat to it, but if you like jalepenos and eggs, you're sure to love this dish.

Ingredients
  • 4 oz jar sliced jalepeno peppers
  • 2 cups shredded cheese (cheddar or a mexican blend)
  • 6 large eggs, beaten

Directions
  1. Preheat oven to 350
  2. Spray 9x9 inch pan. Spread jalepenos evenly over bottom of pan. Sprinkle cheese over the top of the jalepenos. Pour eggs over all.
  3. Bake for 30 minutes or until done in center.
  4. Cut into pieces....recipe says 4 servings, we usually get more like 8 out of this (especially if you are serving w/ other breakfast items).
