How to make it

  • Pare,core and quarter the apples
  • Cut each quarter into 3 pieces
  • Mix sugar,water,syrup and salt in heavy saucepan
  • Bring to boil over medium heat
  • Stirring to dissolve sugar
  • Add Apples slices--as many as the syrup will cover--
  • Boil until slices are transparent
  • Remove the apples from syrup and drain on racks for 24 hours
  • Roll in granulated sugar and replace on racks
  • Roll again at intervals of 24 hours.
  • After the third rolling let crystals stand in the open air until no
  • more moisture exudes from them.
  • Pack in flat container--do not cover--
  • The crystals are an amber color
