Apple Crystals

- 3 Cups sugar shopping list
- 1/4 Cup White syrup shopping list
- 1&1/2 Cups water shopping list
- 1/4 teaspoon salt shopping list
- apples(cooking apples) shopping list
How to make it
- Pare,core and quarter the apples
- Cut each quarter into 3 pieces
- Mix sugar,water,syrup and salt in heavy saucepan
- Bring to boil over medium heat
- Stirring to dissolve sugar
- Add Apples slices--as many as the syrup will cover--
- Boil until slices are transparent
- Remove the apples from syrup and drain on racks for 24 hours
- Roll in granulated sugar and replace on racks
- Roll again at intervals of 24 hours.
- After the third rolling let crystals stand in the open air until no
- more moisture exudes from them.
- Pack in flat container--do not cover--
- The crystals are an amber color
