Ingredients

1/3 c mashed potatoes, unsalted

1 1/3 c powdered sugar

2 1/2 c coconut

1/2 vanilla, coconut or almond extract

Directions

Mix sugar into mashed potatoes, add extract and coconut. Shape into balls and chill. Dip into melted chocolate, cool on wax paper.
