Potato Coconut Candy

A fun use for leftover potatoes. Kids will love making these.
Ingredients
- 1/3 c mashed potatoes, unsalted shopping list
- 1 1/3 c powdered sugar shopping list
- 2 1/2 c coconut shopping list
- 1/2 vanilla, coconut or almond extract shopping list
How to make it
- Mix sugar into mashed potatoes, add extract and coconut. Shape into balls and chill. Dip into melted chocolate, cool on wax paper.
