Baked Shrimp Provencal Recipe
Quick and easy shrimp dish with French flavours. Serve with rice pilaf and some bread - delish!

Ingredients
  • 1 12 oz pkg of frozen shrimp, thawed and shelled
  • 1 tbsp of oil
  • 2 cloves of garlic, minced
  • 1 small red onion, sliced
  • 1 28 oz can of diced tomatoes
  • 1/2 c white wine
  • 2 tsp flour
  • 2 tsp fresh rosemary
  • 2 tsp fresh taragon
  • 1 tsp dried oregano
  • 1/3 c calamata olives
  • 1/4 c of chevre cheese, crumbled
  • 2 tbsp chopped parsley

Directions
  1. Cook onions and garlic in heated oil.
  2. Stir in flour to form a roux.
  3. Add tomatoes with juice and wine. Whisk out any lumps.
  4. Add rosemary, tarragon and oregano.
  5. Cook until sauce has thickened.
  6. Add shrimps and heat through.
  7. Sprinkle with parsley and top with cheese.
