Mexican Squash

- 2 medium zucchini, sliced shopping list
- 2 medium yellow squash, sliced shopping list
- 2 large onions, chopped shopping list
- 4 cloves garlic, minced shopping list
- 4 large red ripe tomatoes, peeled, seeded & chopped shopping list
- 1 can Ro-Tel tomatoes and chiles shopping list
- 1 stick butter shopping list
- basil shopping list
- salt and pepper shopping list
How to make it
- Melt butter and saute garlic and onion until soft. Add zucchini and yellow squash and cook to tender crisp stage. Add can of RoTel and season to taste. Cook until well-combined. Add cheese and stir through just before serving.
