Crab Stuffed Potatoes Recipe
Wonderful cheesey, crab filled, potatoes. It doesn't get much better than this!

Ingredients
  • 4 medium baking potatoes
  • 1/4 cup butter
  • 1/4 to 1/3 cup light cream
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 1/4 cup finely chopped green onions
  • 1 cup shredded cheddar cheese
  • 1 6-1/2 oz can crabmeat, drained and flaked.
  • paprika

Directions
  1. Bake potatoes at 425 degrees for 45-55 minutes or until tender. When cool enough to handle, halve potatoes lengthwise.
  2. Carefully scoop out pulp into a bowl, leaving a thin shell.
  3. Set shells aside.
  4. Beat or mash potato pulp with butter, cream, salt and pepper until smooth.
  5. Using a forlk, stir in onions and cheese. Gently mix in crab.
  6. Stuff shells. Sprinkle with paprika.
  7. Return to oven for 15 minutes or until heated through.
