How to make it

  • Filling: Melt butter, stir in honey and sugar then pistachio's. Set aside
  • Pastry: Sift together flour and salt. Cut in butter until fine and crumbly. Add ice water and stir with a fork until just mixed. Form into a ball, cover with cling wrap. Chill about 1 hour.
  • Roll dough very thin, cut with a medium round fluted cookie cutter. Place a small amount of pistachio filling onto each pastry circle. Brush edges with water. Fold over and press together.
  • Bake at 375F until lightly golden, about 12 minutes.
  • Glaze: Mix icing sugar and enough milk to make a thin glaze, add vanilla. Drizzle over slightly warm pastries.

    I cannot resist pistachios - what a devine cookie recipe using them as the filling...I know I will have to make this one - it's making me very hungry just reading the recipe and visualizing the delicious little morsels!!
