Cheesed Tortilla Strips Recipe
This is a great topper for soups and salads, you can leave them plain or use the cheese as in the recipe or ---sprinkle with chili or other spices create your own.i like them this way with the cheese and plain too

Ingredients
  • 2 corn tortillas cut in strips 1/2 inch wide and 3 inches long, discarding the odd shaped corner pieces.
  • 1 quart cooking oil
  • 1/2 cup grated monterey jack cheese ,( or jalapeno jack cheese)

Directions
  1. Cut the tortilla strips while the oil is heating to 375 F.degrees in fryer.
  2. then fry a small batch at a time in the fryer basket until the bubbles subside and the strips are crisp and golden in color.
  3. quickly drain each batch on paper towels, place on cookie sheet sprinkle with the cheese while strips are still hot.
  4. when all are fried, place in oven 350 degrees F. for 10 to 15 minutes to melt cheese.
  5. if these are prepared in advanced they should be warmed prior to serving, they taste better warmed.
