Ingredients
  • 3 egg whites
  • 1/2 teaspoon cream of tartar
  • 1 cup sugar
  • 18 saltine crackers
  • 1 cup chopped pecans
  • 1 teaspoon vanilla
  • 1 large container Cool Whip
  • 1/2 pint pineapple preserves
  • 1 package frozen coconut

Directions
  1. Preheat oven to 350 degrees F.
  2. Beat egg whites until frothy
  3. Add cream of tartar and sugar and beat until stiff
  4. Crumble saltines and add pecans and vanilla to egg whites
  5. Place in buttered 14 x 8 inch pan and cook for 35 minutes
  6. Allow to cool
  7. Mix pineapple preserves and Cool Whip
  8. Spread over meringue and sprinkle package of coconut on top
  9. This dessert is better is it is made a day before serving
  10. Keep refrigerated
  11. Serves 20
