How to make it

  • Preheat oven to 350 degrees F.
  • Beat egg whites until frothy
  • Add cream of tartar and sugar and beat until stiff
  • Crumble saltines and add pecans and vanilla to egg whites
  • Place in buttered 14 x 8 inch pan and cook for 35 minutes
  • Allow to cool
  • Mix pineapple preserves and Cool Whip
  • Spread over meringue and sprinkle package of coconut on top
  • This dessert is better is it is made a day before serving
  • Keep refrigerated
  • Serves 20
