Boiled Frosting Recipe
This frosting is OLD fashioned. If you have always wanted to get started in candy-making, this is a good way to start since it requires the same strict adherenece to temperatures and humidity. This recipe is enough for a three-layer cake.

Ingredients
  • 2 c sugar
  • 1/2 c light corn syrup
  • 1/2 c water
  • 2 egg whites
  • 1 1/2 tsp vanilla extract

Directions
  1. Combine sugar, corn syrup, and water in a saucepan. Place over moderate heat and stir until sugar is dissolved.
  2. Continue to boil to soft ball stage (You need a candy thermometer for this: the soft ball stage will be 239°F on a dry day or 242°F on a humid/rainy day)
  3. Meanwhile beat eg whites in a large bowl unti lstiff.
  4. Add syrup in a thin stream, continuing to beat rapidly.
  5. Add vanilla and continue to beat until cold and stiff enough to hold shape.
  6. This can be kept in the fridge for several days. When ready to use, beat in 1/2 tsp of boiling water to soften the frosting.
