Catfish With A Crunch Recipe
I got this from my Better Homes and Garden's "Our Best Recipes" cookbook. I tweaked it just a tad.

Ingredients
  • 4-4oz.fresh catfish fillets (about 1/2 inch thick)
  • 1 egg
  • 1 Tbs. dijon mustard
  • 1/4 tsp. pepper
  • 1/4 C. AP flour
  • 1 C. coarsly crushed pretzels
  • 2 Tbs. cooking oil

Directions
  1. Rinse fish; pat dry with paper towels.
  2. In a shallow dish combine egg,mustard,milk and pepper beating with a whisk or fork until smooth.
  3. Place flour in another shallow dish.
  4. Place pretzels in another shallow dish.
  5. Coat each fillet in flour,then dip into the mustard and finally into crushed pretzels.
  6. In a large skillet cook fish in hot oil over medium heat for 6 to 8 minutes or until golden and fish flakes easily when tested with a fork.
  7. Reduce heat as necessary during cooking to prevent over browning.
