Catfish With A Crunch

- 4-4oz.fresh catfish fillets (about 1/2 inch thick) shopping list
- 1 egg shopping list
- 1 Tbs. Dijon mustard shopping list
- 1/4 tsp. pepper shopping list
- 1/4 C. AP flour shopping list
- 1 C. coarsly crushed pretzels shopping list
- 2 Tbs. cooking oil shopping list
How to make it
- Rinse fish; pat dry with paper towels.
- In a shallow dish combine egg,mustard,milk and pepper beating with a whisk or fork until smooth.
- Place flour in another shallow dish.
- Place pretzels in another shallow dish.
- Coat each fillet in flour,then dip into the mustard and finally into crushed pretzels.
- In a large skillet cook fish in hot oil over medium heat for 6 to 8 minutes or until golden and fish flakes easily when tested with a fork.
- Reduce heat as necessary during cooking to prevent over browning.
