Island Dressing Recipe

Ingredients

3/4 cup of mayonnaise

1/2 cup of sour cream

1 1/2 tsp of good quality curry powder

1/2 of a fresh lemon juiced

1 tablespoon of dark rum

1/4 cup of flaked coconut

Directions

Whisk together the mayonnaise, sour cream, curry powder, lemon juice and rum.

Stir in the coconut.

cover and chill to allow the flavors to blend

Very good with poached chicken, celery, and cashews.
