Another one of my mom's best spinach salads

Ingredients
  • 1 cup of sour cream
  • 1/2 cup good quality mayonnaise
  • 1 tbsp of sugar
  • 1 tbsp of vinegar
  • 1 tbsp of prepared horseradish
  • 1 tbsp of prepared mustard
  • 1/2 tsp of salt
  • 1/4 tsp of garlic powder
  • Salad:
  • 6 cups of fresh spinach, bite size pieces
  • 2 cups of colby cheese cut in strips
  • 3 hard cooked eggs
  • 1/2 cup peanuts
  • 3 sliced green onions

Directions
  1. Blend all dressing ingredients.
  2. Chill for at least two hours.
  3. Combine salad ingredients.
  4. Add scant amount of dressing,
  5. Toss to coat.
  6. Serve extra dressing on the side.
  7. Sliced water chestnuts are a fun addition.
  8. Mom sometimes added a well drained can of tuna to this, too.
