I can't remember where I got this yummy recipe or picture from. I do lnow that it tastes good though.

Ingredients
  • 1 Tbs. olive oil
  • 4 salmon fillets, 3/4" thick each
  • 1 C.Chicken Broth )
  • 2 Tbs. balsamic vinegar
  • 1 Tbs. Dijon mustard
  • 2 tsp. packed brown sugar

Directions
  1. Heat oil in medium skillet over medium-high heat.
  2. Add salmon, skin-side up, and cook for about 5 min. or until browned.
  3. Turn salmon and season with black pepper.
  4. Add 1/2 cup broth.
  5. Heat to a boil.
  6. Cover and cook over low heat 5 min. or until fish flakes easily when tested with a fork.
  7. Remove salmon and keep warm.
  8. Add remaining broth, vinegar, mustard and brown sugar.
  9. Heat to a boil.
  10. Cook over medium heat 10 min. or until mixture is slightly thickened and reduced to 1/4 cup.
  11. Serve over salmon. .

This dish spunds excellant. I don`t know if it is the way I cook it, but although it is a lovely dish, mine always seems to taste a bit bland. I am sure your method of preparation will improve upon it a lot. anyway I will have a try
