How to make it

  • Heat oil in medium skillet over medium-high heat.
  • Add salmon, skin-side up, and cook for about 5 min. or until browned.
  • Turn salmon and season with black pepper.
  • Add 1/2 cup broth.
  • Heat to a boil.
  • Cover and cook over low heat 5 min. or until fish flakes easily when tested with a fork.
  • Remove salmon and keep warm.
  • Add remaining broth, vinegar, mustard and brown sugar.
  • Heat to a boil.
  • Cook over medium heat 10 min. or until mixture is slightly thickened and reduced to 1/4 cup.
  • Serve over salmon. .

    This dish spunds excellant. I don`t know if it is the way I cook it, but although it is a lovely dish, mine always seems to taste a bit bland. I am sure your method of preparation will improve upon it a lot. anyway I will have a try
