No Crust Coconut Pie Recipe
These coconut pies are perfect for picnics or cook outs! The recipe makes two pies! Enjoy one, and share one!

Ingredients
  • 1 3/4 cup sugar
  • 1/2 cup self-rising flour
  • 4 eggs, well beaten
  • 1/2 stick butter, melted
  • 1 teaspoon real vanilla extract
  • 2 cups milk
  • 7 ounces coconut, fresh or frozen
  • Dash of nutmeg, if desired

Directions
  1. Mix sugar and flour.
  2. Add beaten eggs, then add remaining ingredients.
  3. Pour into 2 greased 9-inch aluminum foil pie tins.
  4. Bake at 350 degrees until brown on tops, about 35 minutes.

Hi maggiehc! My Grandmama made these, and they're one of my earliest comfort foods! Yum! To me, it's a little bit like an egg pie, and a little bit like a custard pie. That's just me though, and either way, it's really tasty!
