Easy Microwave Shrimp Nachos

- 6 ounces reduced-fat tortilla chips shopping list
- 1 cup lower-sodium salsa shopping list
- 1/2 lb. cooked shrimp, coarsely chopped shopping list
- 1 can (15 oz.) white beans, drained and rinsed shopping list
- 1 cup reduced-fat shredded pepper-jack cheese shopping list
- 2 scallions, trimmed and thinly sliced shopping list
- 1 small sweet red pepper, cored, seeded and thinly sliced shopping list
How to make it
- Line the bottom of a large microwave-safe serving dish with half of the tortilla chips. Evenly spoon on half of the salsa. Layer half each of shrimp, beans, cheese, scallions and red peppe
- Microwave on high for 2 minutes, until hot and bubbly.
- Repeat with the remaining ingredients on a second dish.

Beans and shrimp are a great combo, I do them together with pasta. I can see this working well as a nacho dish!! Great post.
