How to make it

  • Line the bottom of a large microwave-safe serving dish with half of the tortilla chips. Evenly spoon on half of the salsa. Layer half each of shrimp, beans, cheese, scallions and red peppe
  • Microwave on high for 2 minutes, until hot and bubbly.
  • Repeat with the remaining ingredients on a second dish.

    Beans and shrimp are a great combo, I do them together with pasta. I can see this working well as a nacho dish!! Great post.

    Here's another one I've never heard of, and another one to try. We're trying to eat more fish, and we like to pretend that shrimp counts!
