Easy Microwave Shrimp Nachos Recipe
Low-cal and very tasty! I got this from my Family Circle Magazine.

Ingredients
  • 6 ounces reduced-fat tortilla chips
  • 1 cup lower-sodium salsa
  • 1/2 lb. cooked shrimp, coarsely chopped
  • 1 can (15 oz.) white beans, drained and rinsed
  • 1 cup reduced-fat shredded pepper-jack cheese
  • 2 scallions, trimmed and thinly sliced
  • 1 small sweet red pepper, cored, seeded and thinly sliced

Directions
  1. Line the bottom of a large microwave-safe serving dish with half of the tortilla chips. Evenly spoon on half of the salsa. Layer half each of shrimp, beans, cheese, scallions and red peppe
  2. Microwave on high for 2 minutes, until hot and bubbly.
  3. Repeat with the remaining ingredients on a second dish.

Here's another one I've never heard of, and another one to try. We're trying to eat more fish, and we like to pretend that shrimp counts!


Beans and shrimp are a great combo, I do them together with pasta. I can see this working well as a nacho dish!! Great post.
