Junkett or Curds and Whey

- 5 cups buttermilk or soured milk shopping list
- 2 1/2 cups whole milk shopping list
- 1/2 teaspoon ground cinnamon (for power) shopping list
- 1 teaspoon caraway seeds shopping list
- 1 tablespoon sugar, or to taste shopping list
How to make it
- Put the buttermilk in a large mixing bowl.
- Scald the whole milk in a saucepan by heating to just below the boiling point.
- Quickly add it to the buttermilk in the bowl; stir thoroughly.
- Allow this mixture to stand until it is cool; drain through a cheese cloth, reserving the whey.
- Squeeze the curds from time to time while draining.
- Mix the cinnamon and caraway seeds into the cheese curds; sweeten with sugar.
- Turn curds into small dessert dishes.
- Mix a little sugar with 5 tablespoons of the whey, and pour over the curds.
- Serve.
