Ingredients
  • 5 cups buttermilk or soured milk
  • 2 1/2 cups whole milk
  • 1/2 teaspoon ground cinnamon (for power)
  • 1 teaspoon caraway seeds
  • 1 tablespoon sugar, or to taste

Directions
  1. Put the buttermilk in a large mixing bowl.
  2. Scald the whole milk in a saucepan by heating to just below the boiling point.
  3. Quickly add it to the buttermilk in the bowl; stir thoroughly.
  4. Allow this mixture to stand until it is cool; drain through a cheese cloth, reserving the whey.
  5. Squeeze the curds from time to time while draining.
  6. Mix the cinnamon and caraway seeds into the cheese curds; sweeten with sugar.
  7. Turn curds into small dessert dishes.
  8. Mix a little sugar with 5 tablespoons of the whey, and pour over the curds.
  9. Serve.
