How to make it

  • Put the buttermilk in a large mixing bowl.
  • Scald the whole milk in a saucepan by heating to just below the boiling point.
  • Quickly add it to the buttermilk in the bowl; stir thoroughly.
  • Allow this mixture to stand until it is cool; drain through a cheese cloth, reserving the whey.
  • Squeeze the curds from time to time while draining.
  • Mix the cinnamon and caraway seeds into the cheese curds; sweeten with sugar.
  • Turn curds into small dessert dishes.
  • Mix a little sugar with 5 tablespoons of the whey, and pour over the curds.
  • Serve.
